This crunchy brussels sprouts salad is topped with a lemon shallot vinaigrette and a balsamic drizzle. It’s easy to make, and SO delicious!
1 pound Brussels sprouts
2 tablespoons extra virgin olive oil
2 tablespoons shallot (about ½ of a shallot)
¼ cup roasted almonds
¼ cup shaved Parmesan
Salt and pepper, to taste
