These Crispy Italian Oven Roasted Garlic Potatoes will quickly become one of your favorite side dishes. Crispy on the outside; tender on the inside.
4 large or 8 medium red potatoes
4 tablespoons extra virgin olive oil
1 tablespoon rosemary, fresh and finely chopped
3 tablespoons Italian flat leaf parsley, fresh and finely chopped
3 sage leaves, fresh and chopped
6 garlic cloves, smashed
¼ teaspoon oregano, dried
a few pinches of chili pepper
¼ teaspoon salt
⅛ teaspoon black pepper
1 teaspoon of olive oil for drizzling bottom of roasting pan
If desired, garnish with more fresh herbs.
