This oil-free and healthy granola is festively filled with pumpkin’s favorite spices (as well as actual pumpkin, of course!). It’s also packed with oats, nuts, and a secret ingredient for extra crunch – quinoa!
Ingredients
2 ½ cups rolled oats
½ cup pumpkin seeds (pepitas)
½ cup walnuts, chopped
⅓ cup shredded coconut
¼ cup uncooked quinoa
1 ½ teaspoons ground cinnamon
½ teaspoon ground ginger
¼ teaspoon ground nutmeg
¼ teaspoon ground cloves
⅛ teaspoon salt
¼ cup brown sugar, packed
¼ cup pumpkin puree
⅓ cup maple syrup
1 teaspoon vanilla extract
⅓ cup dried cranberries
