Baked Sweet Potato with Fruity Cottage Cheese – super-easy and flu-approved.
2 large sweet potatoes
14 oz (400 g) organic cottage cheese or from the farmers market (for vegan version: plant based yoghurt or tofu sour creme might be a great substitute)
3 mandarines, peeled and chopped
1 pear, peeled, pitted, and chopped
2 Tbs sunflower seeds
fresh herbs (I use a large handful of chives)
