Banana Upside Down Cake Baked Oatmeal

Banana upside down cake in breakfast form! Once inverted, this vegan baked oatmeal is topped with caramelized bananas, making it taste far more decadent than it actually is.

Ingredients

1 tablespoon maple syrup
1 teaspoon brown sugar, packed
~ ⅛ teaspoon lemon juice
2 very ripe bananas
⅓ cup pumpkin puree, applesauce or zucchini puree
½ teaspoon ground cinnamon
Pinch of ground nutmeg
1 ¼ teaspoons vanilla extract
1 cup rolled oats
¾ teaspoon baking powder
Pinch of salt
⅔ cup almond milk
