Cheddar Dill Puffs (Gougères) are crispy on the outside, light and airy on the inside. They are a fantastic appetizer for any party.
1 cup water
½ cup (1 stick) unsalted butter, cut into tablespoon pieces
½ teaspoon kosher salt
1 cup all-purpose flour
4 to 5 large eggs
1½ cups (about 6 ounces) finely grated yellow Cheddar (preferably extra-sharp)
2 tablespoons finely chopped fresh dill
