Chettinad Poondu kuzhambhu | South Indian recipes – a famous recipe in chettinad cuisine.

Ingredients

Garlic Flakes – 25nos.
Shallots (Small Onions) – 10 nos.
Tomatoes (ripe) – 2 nos.
Red chilli powder – 2 tsp
Coriander powder – 2 tbsp
Sambar powder – 1 tbsp
Tamarind – Lemon sized
Coriander leaves (Chopped) – 4 tbsp
Salt – as needed
Hing (Perungayam) – a generous pinch
Jaggery – 2 tsp

To Season:
Gingelly Oil (Sesame oil) – 4 tbsp
Mustard – ½ tsp
Fenugreek seeds – ¼ tsp
Jeera (Cumin Seeds) – ½ tsp
Curry leaves
