Chocolate Chip Coconut Oat Muffins

Serves: 12 muffins

Delicious and satisfying oat muffins with flecks of shredded coconut and melty chocolate chips. Topped off with a crunchy cap of oats, cashews, and coconut – skip the oatmeal and grab a muffin instead!

Ingredients

2 Tablespoons coconut oil, plus 3 Tablespoons melted
3 Tablespoons unsalted butter, melted
2 cups old-fashioned rolled oats
1 3/4 cups all-purpose flour
1 1/2 teaspoons course salt
3/4 teaspoon baking powder
1/4 teaspoon baking soda
1 cup packed light brown sugar
1 3/4 cups whole milk
2 large eggs, beaten
1/2 cup unsweetened shredded coconut
1 cup milk or dark chocolate chips

For the Topping:
1/3 cup old-fashioned rolled oats
1/3 cup all-purpose flour
1/4 cup unsweetened shredded coconut
1/4 cup chopped cashews
1/8 teaspoon salt
1/4 cup packed light brown sugar
3 Tablespoons unsalted butter, melted
1 Tablespoon coconut oil, melted
