These Chocolate Gingerbread Balls are decadent yet healthy Christmas cookies that melt in your mouth.
1 and 2/3 cups (250g) dried plums (prunes)
2 oz (55g) dark chocolate, melted
1 cup (130g) sunflower seeds
1/2 teaspoon vanilla extract
1/4 cup almond milk (or other milk of choice)
1/2 teaspoon gingerbread spice
optional: coconut sugar and gingerbread spice for rolling (or roll in cocoa powder, coconut, sunflower seeds or even dip in chocolate!)
