Creamy Vegan Corn Summer Soup

Corn summer soup made with fresh ingredients: corn kernels, red potatoes, low sodium vegetable broth and unsweetened almond milk.

Ingredients

3 tsp olive oil
1/3 cup onion (red/yellow chopped)
2 tsp garlic (minced)
2 medium red potatoes (diced)
1/2 tsp salt.(or according to taste)
1/2 tsp paprika
1/4 tsp turmeric powder
2 ears corn (kernels sliced off)
2 cups unsweetened almond milk
1 cup vegetable broth (low sodium)

For Garnish:
1/2 bell pepper (chopped)
1/2 cup corn kernels
1/2 tsp Italian seasoning (mixed herbs of your choice)
1/2 tsp freshly crushed black pepper
2 green onions (chopped)
