Eggplant Fry

Eggplant Fry is a South Indian dish where the eggplants are sliced into roundels and pan-fried in spices. It is quick, flavorful and a perfect vegan accompaniment for rice and roti!

Ingredients

Eggplants ­ small, about 8
Water­ 1 cup
Salt ­ 1 tbsp
Red chilli powder ­ 1 tsp
Garlic ­ minced, 4
Vegetable masala powder ­ 2 tsp
Curry leaves,­ a sprig
Oil for shallow fry
