Gluten Free Breakfast Pancakes

Serves:

Gluten Free Kefir Pancakes – delicious with a savory mushroom topping for breakfast

Ingredients

Pancakes:
2 cups white rice flour
2 cups buttermilk or kefir
1 tbsp baking powder
2 eggs
a pinch of salt
juice of 1 lime

Topping:
2 cups mixed mushrooms of your liking
1/4 cup spring onions
1 dried tomato
1 tsp unsalted butter
salt, pepper
2 eggs
1/4 cup cheese (of your liking)
