Gluten Free Quinoa Coconut Cookies

Coconut & chocolate cookies made with quinoa & oat flour. Pretty easy & pretty good!

Ingredients

1.5 cups of oat flour (put 1.5 cups of oats into a blender/magic bullet & it becomes flour!)
1 tsp of salt
1/2 tsp of baking powder
1/2 tsp of baking soda
1 tsp cinnamon
1/2 cup of coconut oil at room temp.
1/4 cup of honey
2 eggs
1 tsp vanilla extract
1 cup of cooked quinoa, cooled (click here for quinoa cooking instructions)
1/2 cup of sweetened coconut
4 cubes of dark, semi-sweet chocolate, shaved or chopped. (or chocolate chips)
