Go-To Radish Salad

A simple radish salad with cucumber, red onion, cilantro, and lemon. Perfect for a quick side dish or toppings.

Ingredients

1 large English cucumber, diced
2 cups diced red radish and watermelon radish (usually from 8 radishes)
¼ cup diced red onion
½ teaspoon sea salt
¼ teaspoon ground black pepper
Juice of 1 lemon
3 tablespoons olive oil
½ cup fresh cilantro, chopped
