This Healthy Quinoa Fried Rice takes only 15 minutes to make! It tastes just like regular fried rice!

Ingredients

2 eggs, beaten
2 teaspoons coconut oil
3 cups cooked quinoa , made one day ahead of time
1 large carrot, shredded
4 cloves garlic, minced
½ cup frozen peas
3 tablespoon liquid aminos
2 tablespoons rice wine
2 tablespoons green onions, plus more for garnish
