Lemon and Poppy Seed Baked Oatmeal

Celebrate spring with this baked oatmeal, which tastes like a Lemon and Poppy Seed muffin. Don’t be worried about the banana in the recipe – you can’t taste it! The banana gives this oatmeal sweetness and a lovely muffin-like texture.

1 small overripe banana (or half of a large one)
1 teaspoon lemon zest
1 teaspoon lemon juice
½ teaspoon vanilla extract
1/3 cup almond milk
½ cup rolled oats
¼ teaspoon baking powder
Tiny pinch of salt
1 ½ teaspoons poppy seeds
