Mushroom Fajita Black Bean Burritos
Burritos are my favorite go-to, fast and easy weeknight dinner. These mushroom fajita black bean burritos are filled with seasoned sauted peppers, onions, and mushrooms. There is enough filling for 6 large burritos. The recipe includes instructions for leftovers as well!
1 large each: green bell pepper, red bell pepper, and yellow onion, sliced
splash of olive oil
16 oz baby portabella mushrooms, diced
Fajita Seasoning
½ tsp each: chili powder, cumin, paprika, onion powder, and garlic powder
¼ tsp each: black pepper, salt, and oregano
Burritos
6 large whole wheat burrito tortillas
2 cups cooked black beans
1½ cups cooked brown rice
1½ cups cheddar cheese
½ cup sour cream
¾ cup salsa
¾ cup guacamole
