A great way to use up those giant zucchini that were hiding in the garden, or simply put a different spin on a comfort-food favorite!
1 giant (2-3 regular) zucchini, mandolin sliced into thin rounds
4-5 cups red lentil marinara sauce (or 1 ½-2 jars regular)
1 container low-fat ricotta (we only had the 12 oz size available- but 8 would probably work!)
1 8-10oz container of mushrooms
2 cups spinach, shredded kale or other green
1 teaspoon olive oil
salt and pepper
