Pineapple Pound Cake

This Pineapple Pound Cake is made with crushed pineapple, packed with pecans and decorated with lemon icing.

Ingredients

For the cake:
1¼ cups sugar
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
4 eggs, separated
1 cup canola oil
2½ cups all-purpose flour
3½ teaspoon baking powder
¾ teaspoon salt
¼ cup cold water
8 oz. (225g) canned crushed pineapple, undrained
1 cup pecans, chopped and toasted (+more for sprinkling)

For the icing:
1 tablespoon unsalted butter
3 cups sifted powdered sugar
1 tablespoon water
3 tablespoons lemon juice
