Ingredients

1 1/2 cup whole wheat pastry flour
1 1/2 teaspoon baking powder
pinch of salt
1 teaspoon cinnamon
1/3 cup extra virgin olive oil or avocado oil
2 teaspoons maple syrup
1 cup purple sweet potato puree
pasture raised eggs (omit if vegan, or replace with tofu)
avocado slices
sliced tomatoes
