Peach Avocado Toast with heart-healthy avocado, only 10 minutes to prep and under 400 calories.
2 slices whole grain bread (we used Dave’s Killer Bread 21 Grains)
1 medium avocado, pitted and sliced
1 small peach, pitted and thinly sliced
3 leaves Lacinato kale, ribs removed and very thinly sliced (or sub 1 cup greens of your choice)
1 and 1/2 teaspoon white balsamic vinegar
1 tablespoon crumbled Gorgonzola cheese
