rhubarb and vanilla jam
Rhubarb and vanilla make a great pairing (think rhubarb and custard), and this jam is a delightful example of this successful marriage of flavours.
500 g forced rhubarb, washed and cut into 3cm lengths
375 g jam sugar (with added pectin)
5 vanilla pods (or use 5 tsp of natural organic vanilla essence)
Juice of 1 lemon
