Are you busy planning your Thanksgiving menu? I still can’t believe November is halfway over and that Thanksgiving is coming up so soon. And I will admit, I have no idea what we’re going to have. Carrots with Feta and Toasted Pine Nuts from The Spicy RD // The carrots in this recipe are steamed, which helps free up precious oven space when you’re cooking dinner! Although the pine nuts are toasted in the oven, they only take 2 minutes, so you can do that right before serving.
Squash Risotto with Maple Cheddar from Because I Like Chocolate // Yes, risotto is a little bit labor-intensive, but if you pair this with some easier sides, it’s definitely doable. Risotto makes a great vegetarian main dish too!
Vegan Roasted Garlic Cheddar Dill Mashed Potatoes from Connoisseurus Veg // I’m a big fan of gravy (obviously), but if you add flavor in your mashed potatoes, you don’t need the gravy. That makes things a little bit easier on Thanksgiving, right?Save Recipe
