Socca-chickpea crêpe with spinach & sweet potato

French street food Socca made with chickpea flour, spinach and sweet potato latke.

Ingredients

1 cup chickpea flour
1 cup water
2 tbsp olive oil + more for baking
½ tsp salt
3 dl baby spinach
1 clove garlic, minced
1 sweet potato
1 tsp chipotle chili pepper
1/4 teaspoon sea salt
1 tbsp olive oil or canola oil
1 dl ajvar, or roasted red paprika pure
pepper, to taste
