Thai peanut sauce, sautéed vegetables and pineapple top this quick & easy rice bowl recipe, that’s both vegan & gluten free!

Ingredients

1 tbsp sesame oil
1 cup carrots (julienned)
1 cup red onion (sliced)
½ cup red bell pepper (sliced)
½ cup green bell pepper (sliced)
1 cup broccoli (chopped)
3 cloves garlic (minced)
1 tsp fresh ginger (minced)
1 cup red cabbage (shredded)
1 cup pineapple (cubed)
4 cups cooked white rice
½ cup Thai peanut sauce
1 tbsp fresh cilantro (chopped)
1 tbsp chopped peanuts
