Vegan cookie dough granola bars are chewy, rich, and loaded with chocolate or raisins! Such a wonderful sweet snack, breakfast, or dessert. Gluten free and sweetened naturally!
1 1/2 c whole grain rolled oats
1/4 c whole grain rolled oats, ground into flour
1/2 c date paste (I use 8 medjool dates blended with 1/2 c hot water)
1/4 c natural unsweetened cashew butter
1 tbsp vanilla extract
Optional: chocolate chunks or raisins
