Fresh parsley, potatoes, some slices of dark bread… A nice potato salad requires simple and cheap ingredients, for a delicious result when you are cooking for your office team. This is a vegan version with courgettes and soy cream, because veggie is tasty!

Serves:

6 big potatoes
2 or 3 onions
1 courgette
1 garlic clove
Fresh parsley (few leaves)
Soy cream
Instant vegetable stock
Salt, pepper
A nice bread
