Rich, gooey vegan snickerdoodle bars have all the sweet, cinnamon flavors of the traditional cookie, in easy to make bar form! Healthy, gluten free and naturally sweetened.
1 can chickpeas, drained and rinsed
1 c almond milk
1 c date paste – I use about 15 medjool dates blended with 1 c hot water, then measure out 1 c paste
1/2 c whole grain rolled oats, ground into flour
2 tbsp cinnamon
Stevia + cinnamon mixture to sprinkle over bars before baking
