Vegetarian Mole and Sweet Potato Enchiladas with Tofu

Serves: 4-6

This recipe for vegetarian mole and sweet potato enchiladas with tofu is pure comfort food. Savory with a little sweet and spice!

Ingredients

1 lb tofu
2 tablespoons olive oil, divided
4 cups cubed peeled sweet potato
½ onion, chopped
2 garlic cloves, minced
1 jalapeno, seeded and chopped
1 teaspoon chili powder
8 corn tortillas
1½ cups mole sauce
1½ cups shredded jack cheese
