Vietnamese Spring Rolls with Mango Sauce

These vegan Vietnamese spring rolls are super delicious. They are light, but filling, healthy and totally satisfying.

Ingredients

12 small rice spring roll papers (or 6 large ones)
1 bell pepper
2/3 cucumber
1 large carrot
1/2 sliced avocado
2 spring onions
1/2 cup of fresh basil
1/2 cup of fresh mint
