This is my favourite salad this summer! It pairs the freshness of cucumber with the sweetness of watermelon. Add basil for a subtle flavour, goat cheese or feta for a savoury bite, and pepitas for the crunch, and enjoy!
1 big handful diced watermelon (approx. 2 big slices cut in a quartered watermelon)
greens of your choice
about 6 big basil leaves
1 small shallot
4 tsp pepitas (pumpkin seeds)
crumbled goat cheese (or feta, omitt or replace with vegan cheese for a vegan version)
olive oil, balsamic vinegar, salt, pepper
