Carrot and Coriander Soup with a Spicy Kick

A filling, warming soup made with carrots, coriander and a host of other fresh ingredients. Low in fat, high in taste!
Ingredients
1 tablespoon olive oil
4-5 medium-sized carrots (peeled and chopped)
1 onion (chopped)
2 cloves garlic (finely chopped)
1 small red pepper (chopped)
1/2 teaspoon fresh ginger
1 teaspoon fresh coriander (with extra to garnish)
1/4 teaspoon turmeric
1/2 teaspoon chilli
Sea salt and pepper to taste
Around 2½ cups stock
1/2 cup milk
1/4 cup cream (or more milk, Greek yoghurt, or crème fraiche)
