This vegetable and red bean soup is perfect for this cold grey weather. It’s packed with beautiful veggies, it doesn’t take a long time to prepare, it is comforting (kinda like our mommy use to make), healthy, and it as enough protein for me to eat it as a meal.
Ingredients
½ cup red rice
1 can (540ml) diced tomatoes
2 cups cauliflower fleurets
2 cup brocoli
1½ cup diced sweet potato
1½ cup canned red beans
6 cups vegetable stock
½ tsp cuminseeds
1 tsp cajun spices
1 tsp onion powder
1 tsp chili powder
1 tsp paprika
salt
