Vegetables, potatoes, and herbs simmered in vegetable broth and water. Simple, light, and delicious.
Ingredients
1 TBSP olive oil
1 large onion, chopped
2 ribs celery, chopped
2 carrots, chopped
1 green bell pepper, chopped
3 cloves garlic, minced
4 cups vegetable broth
2 cups water
12 ounces red potatoes, cut in 1 inch pieces
1 tsp dried thyme
2 bay leaves
salt and freshly ground black pepper
2 cups fresh or frozen corn
2 cups fresh or frozen cut green beans
