Roasted vegetables, the most tasty and delicious way to make vegetables. Crunchy and perfectly spiced.
Ingredients
2-3 tomatoes
2 potatoes (if desired)
2 beets
1-2 medium zucchini
1 large onion
2 carrots
1 head of broccoli and or cauliflower (half and half)
1 eggplant
2 cloves of garlic chopped
1/3 cup (43 grams) olive oil
1 1/2 teaspoon (1 gram) oregano
1 teaspoon (5 grams) salt (1/4 – 1/2 teaspoon 1-2 grams extra for sprinkling)
4-5 fresh basil leaves chopped
3 sprigs fresh rosemary (leaves removed from the stems) or 1 – 1 1/2 teaspoons (1 gram) dried rosemary
