Good morning, world! These honey-scented waffles are soft and fluffy on the inside, and a little crispy on the outside. Plus, they’re gluten-free, refined sugar-free and dairy-free
Ingredients
1 cup (105g) rolled oats, divided
½ cup (80g) white rice flour
¼ cup (40g) brown rice flour
¼ cup (25g) almond meal
2 tablespoons (20g) cornstarch
½ teaspoon ground cinnamon
2 teaspoons baking powder
½ teaspoon baking soda
¼ teaspoon salt
2 eggs, separated
⅓ cup (85g) pumpkin puree
¼ cup (80g) honey
1 tablespoon (15mL) canola oil
1 ½ teaspoons vanilla extract
1 cup (240mL) almond milk
