Banana Split Pancakes
Any and every celebration needs a stack of pancakes. Maybe that celebration is just, ‘It’s Saturday’ – which is definitely worth celebrating with a stack of Banana Split Pancakes. These pancakes are delicious on their own, but it’s the toppings that transform this from ‘delicious pancake stack’ to ‘super banana split surprise’!
For the pancakes:
¾ cup (80g) rolled oats
¾ cup (100g) spelt flour
2 teaspoons baking powder
1 teaspoon baking soda
¼ teaspoon salt
¼ cup (50g) chocolate chips
1 cup mashed banana (~ 2 large, very ripe bananas)
2 eggs, separated
½ cup (120g) strawberry-flavored Greek yogurt
1 teaspoon vanilla bean paste
1 cup (240mL) milk
Toppings (100% necessary):
Chocolate sauce
Sliced bananas
Sliced strawberries
Chopped walnuts
Candied (glacé) cherries
Sprinkles
