No-crust Couscous Quiche

This couscous quiche has no crust and is a light vegetarian dish. If you can’t finish it, it’s very easy to keep in the fridge for a few days or freeze for a weeknight when you don’t feel like cooking.
Ingredients
2 cups cooked couscous
1 cup ricotta cheese (or depending on where in the world you live any other soft cheese that doesn’t have too much salt)
1 cups fresh spinach
2 eggs
1 cup grated cheese (if you have mature cheddar is great)
