Healthier-than-usual banana waffles with chocolate chips, coconut and pecans. The batter for these waffles is butter-free, oil-free and refined sugar-free.
Ingredients
1 cup (110g) rolled oats, divided
½ cup (75g) whole-wheat flour
½ cup (65g) spelt flour
2 teaspoons baking powder
1 teaspoon baking soda
¼ teaspoon salt
¼ cup shredded coconut
¼ cup chopped pecans
¼ cup chocolate chips
2 eggs, separated
1 cup mashed bananas (~ 2 very ripe bananas)
½ cup (125g) plain or natural yogurt
1 tablespoon maple syrup
1 teaspoon vanilla extract
½ teaspoon blackstrap molasses
½ cup milk
