Excellent salad that can also be served as a main dish or side dish. Sweet potatoes are a great source of fiber, which promotes healthy digestion and the tahini is a great source of iron.
Ingredients
2 tablespoons canola or coconut oil
2 large sweet potatoes
½ cup tahini
½ lemon
½ cup filtered water or more if necessary
Half onion (about 1/3 cup)
handful parsley leaves (soaked in cold water to remove the sand)
Salt & pepper
Handful toasted pine nuts – optional
