These Irish nachos are easy to throw together with a blender salsa. They are simple, light and fresh – you’ll love them!
Ingredients
3 potatoes
A handful of grated cheese
A few spoonfuls of light Greek yogurt
Chopped fresh chives or cilantro, optional
2 medium sized tomatoes (the tastiest and ripest you can find!), quartered
¼ of a red onion
1 green chili, seeded
Handful of fresh cilantro (aka coriander)
2 avocados
Juice of 1 lime
Salt and pepper to taste.
