Healthy oatmeal flavored with chamomile tea and vanilla bean, and topped with a raspberry rhubarb compote. This oatmeal is gluten-free (if you use GF oats), vegan and sugar-free.
Ingredients
For the Raspberry Rhubarb Compote:
½ cup frozen rhubarb (or 2 stalks, chopped)
⅓ cup frozen raspberries
1 – 2 teaspoons maple syrup
¼ teaspoon vanilla extract
For the Chamomile Oatmeal:
½ cup almond milk
½ cup chamomile tea
½ cup rolled oats
Pinch of salt
½ teaspoon vanilla bean paste
Chopped nuts, to serve (optional)
