Healthy(er) Peanut Butter Swirl Brownies
Even though I love football, I still think the food is an important part of watching the game. Chips and salsa, pretzels, chili, cornbread, and cookies are all fun to make and eat for the game. Still need an idea of something to bake for the Super Bowl this Sunday? What about making some brownies that are secretly healthy? I know putting beans in your brownies sounds gross, but I guarantee they taste good. I fed them to my friends last weekend without telling anyone what was in them (sorry ๐ )and they disappeared quickly. Go ahead and give them a try! I think the beans make them fudgy and all the more delicious. And if you have skeptical friends, just donโt share the secret ingredient ๐ Bonus: these are gluten-free and can easily be made vegan. A yummy brownie anyone can eat!
1 can black beans (rinsed and drained)
2 eggs (feel free to use flax eggs to make these vegan)
3 tbsp vegetable oil
3/4 cup dark chocolate cocoa powder
1/4 tsp salt
1 tbsp vanilla extract
1/4 cup agave (maple syrup or honey also work well)
1/4 cup + 2 tsp granulated sugar
1 1/2 tsp baking powder
1 tsp baking soda
1/2 cup peanut butter (I used PB2, but any smooth or creamy kind will work)
2 tbsp powdered sugar
1/2 cup chocolate chips (or more โ Iโve never heard of using too many ๐ )
