This simple soup is summer in a bowl.
Ingredients
3 large tomatoes
3 mini cucumbers or 1 English cucumber
1 bell pepper
1 clove of garlic, chopped
2 cups tomato juice (plus more if needed)
1 28 oz can diced tomatoes, including their juice
1 tablespoon fresh thyme leaves
1/4 cup extra virgin olive oil
2 tablespoons sherry vinegar
salt and pepper to taste
