Healthier Vegetarian Poutine
A healthier, vegetarian/vegan-friendly version of the Canadian classic! Make this with no guilt and lots of deliciousness.
For the Gravy:
8 cups of vegetable stock
1 oz package of mixed dried mushrooms
1/4 cup of margarine (Earth Balance if you want to make it vegan)
1/4 cup of extra virgin olive oil
1 minced shallot
1/2 cup of all purpose flour
2 tablespoons of soy sauce
1 teaspoon of Marmite
salt and pepper
For the Fries:
5 medium potatoes
extra virgin olive oil
salt and pepper
Toppings:
large handful of cheese curds or cubed Daiya cheese for a vegan poutine
1 large head of broccoli, chopped into small florets
1 zucchini, sliced
extra virgin olive oil
salt and pepper
