Buttery pastry, juicy tomatoes, and savoury goat cheese, yum! This tart is perfect summertime lunch or dinner.
Ingredients
For the Crust:
1 1/8 cup whole wheat flour
½ cup of cold salted butter, cubed
½ teaspoon of salt
¼ cup of ice cold water
For the Filling:
1 large tomato or 2 medium tomatoes, sliced
3/4 goat cheese, I used green onion goat cheese but any kind would work
salt and pepper
extra virgin olive oil
