A quick and easy dinner with no sushi rolling skills required! Full of veggies and made with brown rice, this bowl is a great healthy option, and it’s vegan!
Ingredients
1 cup of brown rice or sticky rice (dry)
2 teaspoons of rice vinegar
8 asparagus spears, woody ends trimmed
1 avocado, sliced
1/2 cucumber, cut into thin strips
1/4 cup of shredded carrots
1 sheet of nori cut into ribbons
sesame seeds for garnish
soy sauce
