Ingredients
Sweet Potato ‘Meatballs’:
2 large sweet potatoes
1 tin canellini beans
2 tbsp soy suace
1 tbsp toasted sesame oil
2 cloves of garlic
ginger grated
2 tbsp flour
Sesame seeds
Lentils:
140g lentils (I used green)
1 tin coconut milk
100g kale
1 clove of garlic
4cm ginger
Bunch of spring onions
1/2 bunch coriander, use the rest in the slaw
Slaw:
200g mangetout
4/5 radishes
1/2 bunch coriander
