Baked Ginger Pear Oatmeal

Prep the night before and then bake it in the morning for a warm, comforting and healthy breakfast that’s vegan and gluten-free!
Ingredients
2 and 1/2 cup rolled oats
1 and 1/2 cup unsweetened vanilla almond milk (or soymilk for nut allergies)
1/4 cup pure maple syrup
1 tablespoon vanilla extract
2 teaspoons cinnamon
3 teaspoons ground ginger
1/2 teaspoon salt
2 tablespoons coconut sugar or organic brown sugar
2 medium-size pears, cored and diced (approx. 2 cups)
2 flax eggs (2 tablespoons ground flax seed + 6 tablespoons water)
