If you need a quick healthy dessert, whip up this simple mango pudding. Chia seeds help to thicken this dessert and add good-for-you Omega-3s. For an extra special touch, garnish with fresh berries or mango, lime, and non-dairy yogurt or coconut whipped cream.
Ingredients
2 cups (about 1 pound) fresh or frozen mango puree (can blend in blender or food processor is using whole mango)
1/2 cup canned coconut milk
1 to 2 Tbsp brown sugar
1 1/4 cups water
4 Tbsp chia seeds
Optional: 2 tsp lime juice
